Project: AI4WINE

Artificial Intelligence for Optimizing Testing and Maturation of High-Quality European Wines

AI4WINE introduces a technological revolution in winemaking process management through the development of the first smart, multimodal, and non-invasive fermentation monitoring platform.

Unlike traditional systems that rely on manual sampling or isolated sensors, AI4WINE enables continuous, real-time monitoring of fermentation kinetics, aroma evolution, and phenolic balance directly inside the tank.

How It Works (Sensor Fusion & AI)

The platform integrates three advanced subsystems into a single IoT unit connected to the Cloud:

E-nose (Digital Nose)

Continuous monitoring of the gas phase (CO₂, hydrogen sulphide, ethanol vapours) for early detection of odours and deviations.

E-tongue (Digital Tongue)

Monitoring of liquid chemistry (conductivity and acidity trends).

E-eye (Digital Eye)

VIS-NIR optical fibres for live estimation of colour, turbidity, and polyphenol extraction.

The Digital Enologist ("E-nologist")

Sensor data feeds the "E-nologist", an advanced Machine Learning algorithm that:

  • Predicts fermentation stages and completion with over 85% accuracy.
  • Alerts immediately (with less than 5 seconds latency) for potential stuck fermentations or quality deviations.
  • Recommends targeted interventions (temperature adjustment, nutrient additions, aeration) through an intuitive dashboard for the winemaker.
